Best Coconut Pie Ever! Gluten Free & Dairy Free

This is my new favorite recipe. My daughter who’s not a huge fan of anything coconut loves this pie. My husband thinks it’s the perfect amount of sweet (he is as well), and my tummy happens to think it tastes a little like heaven.

If you bring this treat to the party you’ll likely go home a hero.

While you’re making this pie you’ll notice that the filling is very runny, but don’t fret it firms up perfectly in the oven.

Beat the eggs first, then add the rest of the wet ingredients.

Mix your dry ingredients together then add them to your wet ingredients.

Stir well - Sometimes gluten free flour can get clumpy so you mix need an electric mixer for this one.

Bake for 45 mins in a preheated 350 degree oven.
