Easy Summer Quinoa Salad

Easy Quinoa Summer Salad –
 
I make my quinoa in bulk so that I can split the seeds between three dishes during my food prep, this being one of them. I eat this salad cold, and it’s very refreshing and filling.
 
You can really make this with any fresh veg that you have on hand or that your neighbor brings you from their garden (in my case my Mom).
 
My Mom had an abundance of cucumbers and I had some leftover tomatoes and cilantro so that’s what ended up in my salad. In all honesty, you can put as much or as little of the veg you want. I generally use one medium cucumber and on one large tomato (I know a tomato is a fruit). If you happen to love a certain veg over another put as much as you want in. For a little more flavor you can add a purple onion. My daughter won’t eat anything with uncooked onions so I leave them out. 
 
This salad will generally keep for about three days in my fridge and still tasted great. It will probably stay good longer than that, but I generally doesn’t last because I love the freshnesses of it.
You can add some avocado on the top of this dish to make it extra yummy if you have it on hand!!!

Instructions
  1. Chop the Tomato, Cucumber and Cilantro
  2. Put 3 cups of quinoa you've already prepared into a large bowl
  3. Add the chopped veg and cilantro to the quinoa
  4. add salt pepper and toss together
  5. Add oil and toss
  6. drizzle balsamic over the top of the salad and serve cold
