Carrots with an unexpected savory twist that the family will enjoy
Ingredients
- 1 pound baby carrots peeled
- 1 tbsp EVOO
- 1 tsp minced peeled fresh ginger
- 1 tbsp chopped fresh cilantro
- 1/2 tsp grated lime rind
- 1 tbsp fresh lime juice

- Steam carrots until just tender. While your carrots are steaming prepare your fresh ingredients. Preheat a pan large enough for your carrots to lay on the bottom of the pan without being too crowded. Add Extra virgin olive oil and heat on medium for about 3 minutes before adding the steamed carrots. Add carrots, ginger, lime juice, lime rind, and fresh cilantro to the carrots. Mix the ingredients together in the heated pan and let set for about five minutes stirring occasionally. Put prepared carrots on serving tray and poor remaining juice, spice and herbs over the carrots.
