My sister & her husband decided to buy a tractor and start a part time gourmet garlic farm so I’m the lucky owner of a whole lot of something I’d never heard of before & have become very fond of….the garlic scape.
The scape tastes very similar to a garlic clove when it’s raw, just a little more mild, but when it’s cooked it has a very mild taste. When you boil or sauté them, they taste a little like a green bean that’s been cooked with garlic, but it doesn’t taste like a clove of garlic at that point. They are pretty darn yummy.
Since falling in love with the scape I wanted to find a vinaigrette that I could use for our 4th of July celebration so naturally had to be a red, white or blue sauce. Finding nothing online to fit my description I came up with my own recipe. Even the kids will like this sweet and tangy dressing.
I’ll give you the recipe for the dressing, and an idea for the salad, but you can really use this dressing on any salad that you’d typically enjoy a fruity vinaigrette. I made this salad and dressing on Fox.
Dressing – This recipe will make about 12 oz
1 3/4 cups strawberries fresh or frozen
2 TBLS fresh basil (don’t use dried)
3 tsp chopped garlic scapes
2 TBLS local raw honey
2 TBLS pure maple syrup
3 TBLS + 1 tsp balsamic vinegar
For the salad –
Your choice of greens (I used mixed greens)
topped with a handful of cucumbers
a handful of chopped strawberries
A handful of chopped blueberries
half a handful of red onions
A handful of boiled garlic scapes
